INGREDIENTS :

• 2 cups almond flour
• 1 cup powdered erythritol
• 2 teaspoons baking powder
• ¼ teaspoon salt
• ¾ cup almond butter, warmed
• ¾ cup unsweetened almond milk
• 4 large eggs

INSTRUCTIONS :

  1. Preheat the oven to 350°F and align a muffin pan with paper liners.
  2. Mix the almond flour together with the erythritol, baking powder, and salt in a mixing bowl.
  3. In a different bowl, whisk together the almond milk, almond butter, and eggs.
  4. Mix the wet ingredients into the dry mixture until just combined.
  5. Spoon the batter into the prepared pan and bake for 22 to 25 minutes until it cooks enough so that a knife inserted in the center comes out clean.
  6. Cool the muffins in the pan for 4 to 5 minutes then turn out onto a wire cooling rack.
